Anti Inflammatory Medicinal Foods

Tart Cherry Gummies

½ Cup Organic Citrus (2/3 meyer lemon +1/3 clementine) 100% lemon would be OK too!

1 ½ Tablespoon Raw Honey

1/3 cup Tart Cherry Concentrate. (I like Dynamic Health Brand)

3 ½ Tablespoon Grass Fed Gelatin. (Great Lakes Brand, available online)

 

Method

Bring lemon juice and tart cherry to a gentle simmer and add the gelatin. It will dissolve after several minutes. Stir constantly to avoid lumps. (I generally add the tart cherry after I have dissolved as much of the gelatin as I can in the lemon juice. I do it this way to preserve as much of the integrity of the tart cherry as possible).

Once the gelatin is incorporated, pour the mixture into silicon molds or something similar. Chill.

The gummies will stay firm out of the refrigerator but, if you are keeping for more than a couple of weeks. I recommend storing in the fridge.  Should last at least a month in the fridge, (providing you haven’t eaten them all).

 

Coconut, raspberry and turmeric panna cotta ! (vegetarian)

2 cups organic coconut milk

½  Teaspoon vanilla extract

1 cup frozen organic raspberries

½ Tsp Organic Turmeric Powder

1 -1 ½ Tablespoons of honey.

3 Tsp Agar Agar Flakes

 

Method

Heat coconut milk with the turmeric powder, vanilla extract and frozen raspberries. Bring to a simmer and Mash the raspberries so they start to melt into the coconut milk. If you want to remove the seeds, you can sieve them out, once the raspberries are soft. Push the raspberry coconut mixture through a sieve and return to the heat whisking the agar agar flakes into the mixture. Do not boil. It may take 10-15 minutes of constant whisking before the flakes are completely melted.

Once melted pour the mixture into whatever you intend to use as a serving dish. I like to pour into little dishes so that each person gets about ¼ cup.

 

Turmeric and Honey Ghee

½ cup of Grass fed Ghee, (Pure Indian Foods Brand or similar), or organic coconut oil

10 Teaspoons of organic powdered turmeric.

2 Teaspoons of Raw Honey.

 

Method

In a jar that you will use for storage, pour melted ghee or coconut oil on top of the powdered turmeric. Stir and mix together until all the turmeric is incorporated. Add the honey and keep stirring. Taste the mixture. Add more honey if you need. This does not need to be stored in the fridge and should stay good for several months.

 

Turmeric Herbal Drink

2” piece of turmeric

2” piece of ginger

1 lemon

1-2 Teaspoon of honey

A few grinds of black pepper

 

Method

Slice or grate the ginger and turmeric. Add the black pepper.

Simmer in 3 cups of water for 20 minutes

Remove from the heat, add the lemon and honey and sieve some of the drink into a mug.  This is a great drink to start the day with.
